Colourful BBQ skewers – Recipes for every taste

Sun on your skin, the BOWL at the beach, a cool drink in your hand – and the scent of freshly grilled skewers in the air. Skewers are the perfect soul food for relaxed summer days with friends: easy to prepare, adaptable to any taste, and adding colour to the grill.

They work best on the plancha – here you can sear the skewers until crispy on the outside while keeping them tender inside. Vegetables, feta, or scampi unfold their full flavour without drying out..

Mango Grillspieße

Mediterranean Mango Skewers


Ingredients (for approx. 4 skewers):

  • 1 mango
  • 200 g halloumi
  • 8 cherry tomatoes
  • 2 tbsp olive oil
  • Salt, chili or paprika powder
  • Skewers (wood or metal)

Preparation:

1. Cut halloumi into cubes, mango into pieces, halve cherry tomatoes.
2. Thread alternately onto skewers.
3. Marinate with olive oil, salt, chili and paprika powder.
4. Grill on the plancha until halloumi is golden brown.

Falafel Vegetable Skewers


Ingredients (for approx. 4 skewers):

  • 8 small falafel balls (homemade or ready-made)
  • 1/2 bell pepper
  • 1/2 zucchini
  • 1/2 red onion
  • 2 tbsp olive oil
  • Salt, pepper
  • Skewers (wood or metal)

Preparation:

1. Prepare falafel balls.
2. Cut bell pepper, zucchini and onion into pieces.
3. Thread alternately onto skewers.
4. Grill on the plancha until vegetables develop roasted flavours.

Asian Veggie Skewers


Ingredients (for approx. 4 skewers):

  • 150 g mushrooms
  • 150 g tofu (plain or marinated)
  • 1/2 bell pepper
  • 8 cherry tomatoes
  • 100 g broccoli florets
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • Skewers (wood or metal)

Preparation:

1. Wash mushrooms, broccoli florets and cherry tomatoes.
2. Cut tofu and bell pepper into pieces.
3. Thread everything onto skewers.
4. Brush with soy sauce and sesame oil, then grill.

Feta Grillspieße

Feta Zucchini Skewers


Ingredients (for approx. 6 small skewers):

  • 1 zucchini
  • 150 g feta
  • 2 tbsp olive oil
  • 1 tsp dried herbs (e.g. rosemary, thyme, oregano)
  • Salt, pepper
  • Skewers (wood or metal)

Preparation:

1. Slice zucchini lengthwise into thin ribbons with a peeler or mandoline.
2. Cut feta into bite-sized cubes.
3. Wrap each feta cube with a zucchini strip and secure with a small skewer.
4. Brush with olive oil, sprinkle with herbs, and grill briefly until feta softens slightly and zucchini develops roasted flavours.

Scampi Asparagus Skewers


Ingredients (for approx. 4 skewers):

  • 12 raw scampi
  • 200 g green asparagus
  • 2 tbsp olive oil
  • 1 clove garlic (crushed)
  • 1 tsp lemon juice
  • Salt, pepper
  • Skewers (wood or metal)

Preparation:

1. Peel and devein scampi, cut asparagus into pieces.
2. Thread alternately onto skewers.
3. Mix olive oil, garlic and lemon juice, marinate skewers.
4. Grill on the plancha until scampi are pink and translucent.
